This is a great nutritious drink, snack, or pudding that provides two of your five daily servings of fruit and vegetables, 1⁄4 of your daily calcium needs, and feels like a treat!
Depending on your tolerance, you can blend the ingredients until smooth and drink straight away. If you prefer a smoother texture, you can pass the mixture through a sieve to remove any ‘bits’ that aren’t as easy to digest. For most people, this can be enjoyed 2-3 times a week, and for those trying to increase their weight, it can be enjoyed daily.

Ingredients
- 260ml calcium fortified coconut milk
- 20g cocoa powder
- 8 pitted dates
- 100g honey
- 100g spinach
- 250g frozen cherries
Method
- Take the jug from a blender and add 175ml of the coconut milk.
- Add the cocoa powder, dates, honey, spinach and frozen cherries.
- Start blending the mix and slowly add the remaining milk until you are happy with the consistency (can adjust to make thicker or thinner depending on preference).
- Blend until completely smooth and serve immediately into glasses.
