If you’ve been told to follow a low-fibre diet, or want to have a slightly healthier muffin then this recipe is for you. Having a low-fibre diet can be quite restrictive; these muffins are made partly with wholemeal flour and oats, to add some fibre but should be more gut-tolerable.
These muffins can be great as snacks or a pudding and can be enjoyed by almost everyone with a stoma – if you want to make it lower- fibre, then just use plain flour and leave out the oats.
We’ve added banana for extra potassium as well as chocolate chips and vanilla extract for some tastebud decadence – we hope you enjoy them as much as we do.
Ingredients
- 150g plain flour
- 150g wholemeal flour
- 90g sugar
- 45g honey
- 1 egg
- 350ml buttermilk
- 1tsp vanilla extract
- 150g banana, peeled
- 45g oats
- 45g chocolate chips
- 10g baking powder
Method
- Preheat the oven to 170 ̊C.
- Mix the flour, baking powder and sugar in a bowl.
- In a separate bowl, mix the honey, egg, buttermilk and vanilla until combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Crush the peeled banana with a fork.
- Stir the banana, chocolate and oats through the mix.
- Divide into 12 muffin cups, then place in the oven for 25 minutes or until cooked through.
