Wholemeal Banana Muffins Recipe

If you’ve been told to follow a low-fibre diet, or want to have a slightly healthier muffin then this recipe is for you. Having a low-fibre diet can be quite restrictive; these muffins are made partly with wholemeal flour and oats, to add some fibre but should be more gut-tolerable.

Wholemeal Banana Muffins

These muffins can be great as snacks or a pudding and can be enjoyed by almost everyone with a stoma – if you want to make it lower- fibre, then just use plain flour and leave out the oats.

We’ve added banana for extra potassium as well as chocolate chips and vanilla extract for some tastebud decadence – we hope you enjoy them as much as we do.

Ingredients

  • 150g plain flour
  • 150g wholemeal flour
  • 90g sugar
  • 45g honey
  • 1 egg
  • 350ml buttermilk
  • 1tsp vanilla extract
  • 150g banana, peeled
  • 45g oats
  • 45g chocolate chips
  • 10g baking powder

Method

  1. Preheat the oven to 170 ̊C.
  2. Mix the flour, baking powder and sugar in a bowl.
  3. In a separate bowl, mix the honey, egg, buttermilk and vanilla until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Crush the peeled banana with a fork.
  6. Stir the banana, chocolate and oats through the mix.
  7. Divide into 12 muffin cups, then place in the oven for 25 minutes or until cooked through.
